Batch testing, traceability and certification.

What we test, and why

"Extra virgin" is not a turn of phrase: it is a legal grade with numbers behind it. Every batch is analysed before bottling and does not leave unless it passes.

Tests on every batch

  • Free acidity. Below 0.3°, where the law allows up to 0.8° for extra virgin.
  • Peroxide value. How far the oil has oxidised. The lower it is, the longer it will keep.
  • K270 and K232. These give away refined oil or blends.
  • Tasting panel. Eight tasters. A single detected defect drops the batch to virgin grade, and it is then sold as virgin — never as extra.

Traceability

The lot number on the bottle leads back to the grove, the picking date and the milling time. If something goes wrong we know exactly what to withdraw, without emptying the whole warehouse.

Certification

The organic line is registered with the regional organic farming board and audited every year. The mill runs a HACCP-based self-monitoring plan.
