AOVE organic · violet glass 500 ml

Extra virgin from organic groves: no herbicides, no synthetic plant protection products. The cover crop is mown and left on the ground, and the trees are fed with their own shredded prunings. The grove is registered with the organic farming board and audited every year. At the mill it is pressed first, on a clean line and ahead of any conventional batch, so that no mixing is possible. The rest of the process is identical: malaxation below 27 °C and two-phase separation. It comes in violet glass on purpose. Light is what spoils olive oil fastest, and this glass filters out the part of the spectrum that oxidises it: inside the bottle, the oil ages considerably more slowly.
