Virgin olive oil, plain and simple. It is produced exactly like extra virgin — mechanically only, no solvents, no refining — but the tasting panel finds a note that keeps it out of the top grade, or its acidity goes above 0.8°. It is not a manufacturing fault: usually it is fruit that reached the mill a day later than it should have, or from a plot that had a hard year. It is still untouched olive juice. We sell it as what it is, virgin, at a keener price. It is the everyday oil in many households: for cooking all day without watching the cost.
