Each variety is milled and stored separately; then they are tasted one by one and the year's proportions are decided, because no two harvests are alike. Arbequina brings the sweetness and the fruit; Picual, the stability and the pepper; Hojiblanca, the grassy backbone. The result is a balanced oil with no rough edges — the one people ask for when they want a single oil for everything. Every batch carries its tasting sheet and its analysis, and the blend is made in the tank before bottling, never in the bottle.
